Ingredients

  • 1 pound Large shrimp (peeled and deveined, tails on)
  • 0.5 cup Cornstarch
  • 1.5 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 0.5 teaspoon White pepper
  • 2 cups Vegetable oil (for frying)
  • 4 cloves Garlic (minced)
  • 2 stalks Green onions (finely sliced)
  • 1 piece Red chili (thinly sliced, optional)

Directions

Step 1

Rinse the shrimp under cold water, then pat them dry with paper towels.

Step 2

Place the shrimp in a medium bowl and season them with 0.5 teaspoon of salt and 0.5 teaspoon of ground black pepper. Mix well to coat evenly.

Step 3

In a small bowl, combine the remaining 1 teaspoon of salt, 0.5 teaspoon of ground black pepper, and the white pepper. Set this salt and pepper mixture aside.

Step 4

Place the cornstarch in a separate bowl. Lightly dredge each shrimp in the cornstarch, ensuring it's fully coated, then shake off any excess.

Step 5

Heat the vegetable oil in a large skillet or wok over medium-high heat. Once the oil reaches 350°F (175°C), fry the shrimp in batches for 2-3 minutes or until golden and crispy. Avoid overcrowding the pan. Remove the shrimp with a slotted spoon and transfer them to a plate lined with paper towels to drain excess oil.

Step 6

Carefully pour out most of the oil from the skillet, leaving about 1-2 tablespoons behind. Lower the heat to medium.

Add the minced garlic, sliced green onions, and optional red chili to the skillet. Stir-fry for 30 seconds until fragrant.

Return the fried shrimp to the skillet and sprinkle the reserved salt and pepper mixture over them. Toss everything together for 1-2 minutes to combine and evenly coat the shrimp.
