Ingredients

  • 500 g Raw prawns (peeled and deveined, tails on)
  • 100 g Cornstarch
  • 50 g All-purpose flour
  • 2 tsp Salt
  • 1 tsp Black pepper (freshly ground)
  • 1 tsp White pepper
  • 1 tsp Garlic powder
  • 500 ml Vegetable oil (for frying)
  • 1 Red chilli (thinly sliced)
  • 2 tbsp Fresh lime juice
  • 1 tbsp Soy sauce
  • 1 tsp Honey
  • 1 tbsp Fresh coriander leaves (chopped)
  • 4 Lime wedges (for garnish)

Directions

Step 1

Prepare the prawns by rinsing them under cold water and patting them dry with paper towels. Set aside.

Step 2

In a mixing bowl, combine cornstarch, all-purpose flour, 1 teaspoon of salt, black pepper, white pepper, and garlic powder. Mix well.

Step 3

Heat the vegetable oil in a deep frying pan or wok over medium-high heat until it reaches approximately 180°C (350°F). To check, drop a small piece of batter into the oil—if it sizzles and rises to the surface, the oil is ready.

Step 4

Dredge the prawns in the dry flour mixture, ensuring each is fully coated. Shake off any excess flour.

Step 5

Carefully lower a batch of prawns (5-7 at a time) into the hot oil and fry for 2-3 minutes or until they are golden and crispy. Remove with a slotted spoon and place on a plate lined with paper towels to drain any excess oil. Repeat with the remaining prawns.

To make the lime and chilli dipping sauce, combine lime juice, soy sauce, honey, and half the sliced red chilli in a small bowl. Stir until evenly mixed. Garnish with fresh coriander leaves.

Step 7

Arrange the crispy prawns on a serving platter and sprinkle with the remaining sliced red chilli and 1 teaspoon of salt.

Step 8

Serve immediately with the lime and chilli dipping sauce on the side, along with lime wedges for squeezing over the prawns.
