Ingredients

  • 500 grams large prawns or shrimp, peeled and deveined
  • 100 grams cornstarch
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 1 teaspoon black pepper
  • 500 ml cooking oil (for frying)
  • 3 cloves garlic, finely chopped
  • 2 pieces red chili, thinly sliced
  • 2 stalks green onions, thinly sliced

Directions

Step 1

Clean the prawns or shrimp, pat them dry with a paper towel, and set aside.

Step 2

In a large bowl, combine the prawns with a light sprinkle of salt and 1/2 teaspoon of black pepper. Mix well and let them marinate for 5 minutes.

Step 3

Spread the cornstarch on a plate and coat each prawn evenly, shaking off excess.

Step 4

Heat the cooking oil in a deep frying pan or wok over medium-high heat until hot (around 180°C or 350°F).

Step 5

Fry the prawns in small batches for 2-3 minutes each until golden and crispy. Remove with a slotted spoon and place on a plate lined with paper towels to drain excess oil.

Step 6

In a clean frying pan, heat 1 tablespoon of the previously used oil over medium heat. Add the chopped garlic and stir-fry until fragrant, about 30 seconds.

Step 7

Add the sliced red chili and stir-fry for another 30 seconds.

Return the fried prawns to the pan. Sprinkle the remaining salt, white pepper, and black pepper evenly over the prawns. Toss well to coat.

Add the sliced green onions and toss again briefly before removing from heat.
