Ingredients

  • 500 grams Boneless chicken thighs
  • 100 grams Cornstarch
  • 500 ml Vegetable oil
  • 1.5 teaspoons Salt
  • 2 teaspoons Black pepper
  • 2 large Garlic cloves
  • 1 medium Green bell pepper
  • 1 medium Red bell pepper
  • 1 medium Red chili
  • 2 stalks Scallions
  • 1 inch piece Fresh ginger
  • 1 tablespoon Soy sauce

Directions

Step 1

Cut the chicken thighs into bite-sized pieces, about 1-inch cubes, and place them in a mixing bowl.

Step 2

Add the cornstarch to the chicken and toss well until each piece is thoroughly coated.

Step 3

In a large skillet or wok, heat the vegetable oil over medium-high heat until it reaches about 180°C (350°F).

Carefully add the cornstarch-coated chicken pieces to the hot oil in batches, frying until golden brown and cooked through, approximately 5-7 minutes per batch. Remove the chicken and drain on paper towels.

While the chicken is frying, mince the garlic cloves and ginger. Thinly slice the green and red bell peppers, red chili, and scallions.
