Ingredients

  • 1 pound Tomatillos
  • 1 medium White onion
  • 3 large Garlic cloves
  • 1 medium Jalapeño
  • 0.5 cup Cilantro
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 1 tablespoon Vegetable oil
  • 0.5 cup Water

Directions

Step 1

Husk and rinse the tomatillos to remove any sticky residue.

Step 2

Peel and quarter the white onion.

Step 3

Slice the jalapeño in half lengthwise and remove seeds for less heat, if desired.

Step 4

In a medium pot, combine the tomatillos, onion quarters, jalapeño, and garlic cloves. Add enough water to almost cover the ingredients.

Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook for 8-10 minutes, or until the tomatillos turn a dull green and soften.

Drain the pot and transfer the cooked ingredients to a blender or food processor.
