Preheat your oven to 325°F (163°C).
Cut the pork shoulder into large chunks, about 2-3 inches each. Season the pieces on all sides with salt and black pepper.
Heat olive oil in a large, oven-safe Dutch oven over medium-high heat.
Sear the pork chunks in batches, about 2-3 minutes per side, until golden brown. Remove the pork and set aside.
