Ingredients

  • 8 whole Tomatillos
  • 1 whole Jalapeño pepper
  • 0.5 whole White onion
  • 1 cup Fresh cilantro
  • 2 whole Garlic cloves
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 0.25 cup Water

Directions

Step 1

Peel the husks off the tomatillos and rinse them under warm water to remove any sticky residue.

Step 2

Roughly chop the tomatillos into halves or quarters for easier blending.

Step 3

Carefully remove the stem and seeds from the jalapeño pepper if you prefer a milder salsa, or leave them in for extra heat. Chop into smaller pieces.

Step 4

Peel and roughly dice the white onion into smaller chunks.

Step 5

In a medium saucepan, combine the tomatillos, jalapeño, onion, and garlic cloves with 1/4 cup of water. Cook over medium heat for about 10 minutes or until the tomatillos have softened and turned pale green in color.

Remove the saucepan from the heat and let the mixture cool slightly, about 5 minutes.

In a blender or food processor, combine the cooked tomatillo mixture, fresh cilantro, lime juice, and salt. Blend until smooth and well-combined. If the salsa is too thick, you can add a tablespoon of water at a time until you reach your desired consistency.
