Ingredients

  • 4 medium roma tomatoes
  • 3 pieces dried guajillo chiles
  • 2 pieces dried arbol chiles
  • 2 medium garlic cloves
  • 0.5 medium white onion
  • 1 tablespoon vegetable oil
  • 0.5 cup water
  • 1 teaspoon salt
  • 1 tablespoon lime juice

Directions

Step 1

Preheat a dry skillet or griddle over medium heat.

Step 2

Add the roma tomatoes and cook, turning occasionally, until their skins are blistered and charred, about 8-10 minutes. Remove from heat and set aside to cool slightly.

While the tomatoes are cooking, remove the stems from the guajillo and arbol chiles. Shake out the seeds if a milder salsa is desired.

Step 4

Place the chiles in the same dry skillet and toast lightly for 30-60 seconds on each side until aromatic, being careful not to burn them. Transfer to a bowl and cover with warm water. Let the chiles soak for 10 minutes until softened, then drain them.

In the skillet, add the garlic cloves (with the peel on) and half of a white onion. Cook for 3-4 minutes, turning occasionally, until slightly charred. Remove from heat and peel the garlic cloves.

In a blender, combine the blistered tomatoes, peeled garlic, charred onion, soaked chiles, vegetable oil, water, and salt. Blend until smooth.
