Ingredients

  • 2 lbs ground beef
  • 1 cup plain breadcrumbs
  • 0.5 cup milk
  • 2 large eggs
  • 1 cup salsa
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup extra salsa for topping

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a standard-sized loaf pan or line it with parchment paper for easy removal.

Step 2

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, eggs, salsa (1 cup), chopped onion, minced garlic, cumin, chili powder, salt, and black pepper.

Step 3

Use clean hands or a wooden spoon to mix everything together until all the ingredients are evenly distributed. Be careful not to overmix as this can make the meatloaf dense.

Step 4

Transfer the meat mixture to the prepared loaf pan and press it down gently to shape it into an even loaf.

Step 5

Spread the additional 0.5 cup of salsa evenly over the top of the meatloaf to create a flavorful glaze.

Step 6

Place the loaf pan in the preheated oven and bake for 60 minutes or until the meatloaf reaches an internal temperature of 160°F (71°C).

Step 7

Once done, remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing.

Step 8

Serve warm with your favorite sides such as mashed potatoes, roasted vegetables, or a fresh green salad.
