Ingredients

  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 2 cloves, minced garlic
  • 2 cups elbow macaroni
  • 2 cups salsa
  • 2.5 cups beef broth
  • 2 cups, shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0 as desired optional toppings (sour cream, green onions, cilantro)

Directions

Step 1

In a large skillet or wide saucepan, heat the olive oil over medium heat.

Step 2

Add the diced onion and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

Step 3

Add the ground beef to the skillet, breaking it apart with a spoon as it cooks. Continue to cook until the beef is browned and no longer pink, approximately 5-7 minutes. Drain excess grease if necessary.

Step 4

Season the beef mixture with salt and black pepper, stirring to combine.

Step 5

Stir in the salsa, beef broth, and uncooked elbow macaroni. Mix well to ensure the macaroni is evenly distributed.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 12-15 minutes, stirring occasionally, until the macaroni is tender and most of the liquid is absorbed.

Step 7

Once the macaroni is fully cooked, remove the skillet from the heat and stir in the shredded cheddar cheese until melted and creamy.

Step 8

Taste and adjust seasoning if needed. Serve hot with optional toppings such as sour cream, chopped green onions, or fresh cilantro for extra flavor!
