Ingredients

  • 2.5 lbs pork ribs
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1.5 cups salsa (store-bought or homemade)
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Remove the membrane from the back of the pork ribs for a more tender texture. Pat the ribs dry with a paper towel.

Step 3

In a small bowl, mix together the salt, black pepper, paprika, garlic powder, and onion powder.

Step 4

Rub the spice mixture all over the ribs, coating them evenly.

Step 5

In a large oven-safe dish or roasting pan, add the water. Place a roasting rack on top and lay the seasoned ribs on the rack, meaty side up.

Step 6

Cover the roasting pan tightly with aluminum foil to trap moisture and bake in the preheated oven for 2.5 hours.

Step 7

While the ribs are baking, prepare the salsa glaze by combining the salsa, brown sugar, and apple cider vinegar in a saucepan. Heat over medium heat and simmer for 5-7 minutes until the sauce thickens slightly. Set aside.

Step 8

After 2.5 hours, remove the ribs from the oven and discard the foil. Brush a generous layer of the salsa glaze over the ribs.

Step 9

Increase the oven temperature to 400°F (200°C) or preheat a grill to medium-high heat.

Step 10

Return the ribs to the oven (or place them on the grill) and cook for an additional 20-30 minutes, basting with more salsa glaze every 10 minutes. The ribs are ready when they are caramelized and slightly charred on the edges.

Step 11

Remove from the oven or grill and allow the ribs to rest for 5 minutes before cutting them into individual portions.

Step 12

Serve warm with your favorite side dishes and an extra drizzle of the salsa glaze if desired.
