Ingredients

  • 15 pieces dried arbol chiles
  • 2 pieces dried guajillo chiles
  • 3 pieces roma tomatoes
  • 2 pieces garlic cloves
  • 0.5 piece white onion
  • 1 tablespoon apple cider vinegar
  • 1.5 cups water
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil

Directions

Step 1

Heat a large skillet over medium heat and add the vegetable oil.

Toast the dried arbol and guajillo chiles in the skillet for 1-2 minutes, flipping frequently, until they are fragrant. Be careful not to scorch them as it can turn the salsa bitter.

Step 3

Remove the chiles from the skillet and set them aside.

In the same skillet, add the roma tomatoes, garlic cloves (still in their skins), and half the white onion. Cook for about 8-10 minutes, turning occasionally, until the tomatoes are charred and softened, and the garlic and onion are slightly browned.

Peel the garlic cloves once they are cool enough to handle.
