Ingredients

  • 2 tablespoons butter
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 2 jalapeño peppers, seeded and diced
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 1 can canned diced tomatoes with green chilies, drained
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

In a medium saucepan, melt the butter over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until translucent.

Step 3

Add the minced garlic and diced jalapeños to the pan, and cook for another 2 minutes.

Step 4

Sprinkle the flour over the vegetables and stir to coat. Cook for 1 minute to eliminate the raw flour taste.

Step 5

Slowly whisk in the milk, ensuring there are no lumps, and bring the mixture to a gentle simmer.

Step 6

Reduce the heat to low, and gradually add the shredded Monterey Jack and cheddar cheeses. Stir continuously until the cheese is completely melted and the mixture is smooth.

Step 7

Stir in the drained diced tomatoes with green chilies.

Step 8

Add cumin, paprika, salt, and black pepper. Mix well and adjust seasoning to taste.

Step 9

Remove from heat and stir in the chopped cilantro.

Step 10

Serve warm with tortilla chips or as a topping for nachos.
