  • 16 ounces jar of salsa (mild, medium, or hot, depending on preference)
  • 0.5 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 1 piece lime, cut into wedges (optional)

Directions

Step 1

Season both sides of the chicken breasts with salt, black pepper, and smoked paprika.

Heat the olive oil in a large skillet over medium-high heat.

Once the oil is hot, sear the chicken breasts for 4-5 minutes on each side until golden brown. The chicken does not need to be fully cooked at this stage. Remove the chicken and set aside.
