Ingredients

  • 6 whole Roma tomatoes
  • 1 medium Red onion
  • 1 whole Jalapeño pepper
  • 0.5 cup Cilantro leaves
  • 1 whole Lime
  • 2 cloves Garlic
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat a grill or broiler on high heat.

Step 2

Slice the Roma tomatoes in half and place them cut-side down on a baking sheet or grill. Add the whole jalapeño pepper and unpeeled garlic cloves onto the same pan or grill.

Step 3

Char the tomatoes, jalapeño, and garlic for about 5 minutes, turning occasionally, until the skins are blistered and slightly blackened. Remove them from heat and allow to cool slightly.

Step 4

Peel the garlic cloves and remove the stems and seeds from the jalapeño if you prefer a milder salsa (leave seeds for more heat).

Step 5

In a food processor, combine the charred tomatoes, jalapeño, garlic, chopped red onion, and cilantro leaves.

Squeeze the juice of one lime into the food processor, then add olive oil, salt, and black pepper.

Pulse the mixture a few times until the salsa reaches your desired consistency (chunky or smooth).
