  • 2 tablespoons olive oil

  • 0.5 teaspoon black pepper
  • 1 tablespoon water (if needed)

Directions

Step 1

Preheat a cast iron skillet or griddle over medium-high heat.

Place the Roma tomatoes, jalapeños, serrano pepper, and white onion (quartered) onto the skillet. Allow them to char on each side for 3-4 minutes, turning occasionally until the skins are blistered and slightly blackened. Remove and set aside.

Add the garlic cloves (unpeeled) to the skillet and char lightly for about 2 minutes until fragrant. Remove the skins once cooled.
