Ingredients

  • 4 pieces dried guajillo chiles
  • 3 pieces dried pasilla chiles
  • 2 pieces Roma tomatoes
  • 0.5 pieces white onion
  • 2 pieces garlic cloves
  • 0.25 cups dark beer or tequila
  • 1 teaspoons salt
  • 1 tablespoons piloncillo or dark brown sugar
  • 1 tablespoons vegetable oil
  • 0.5 cups water

Directions

Step 1

Heat a dry skillet or griddle over medium heat. Toast the guajillo and pasilla chiles for 10–15 seconds on each side, until fragrant and slightly darkened. Be careful not to burn them, as this will make the salsa bitter.

Step 2

Remove the toasted chiles and let them cool slightly. Then, use scissors to cut the chiles open and remove the seeds and stems. Set aside.

Step 3

In the same skillet, roast the tomatoes, half onion, and garlic cloves. Turn them occasionally until they are charred on all sides, about 5–7 minutes. Remove from the heat.

Step 4

In a small pot, combine the toasted chiles, charred tomatoes, onion, and garlic. Add 0.5 cups of water and bring to a simmer over medium heat. Cook for 5 minutes to soften the chiles.
