  • 4 pieces garlic cloves, minced
  • 1 medium red onion, diced
  • 16 ounces jarred salsa (mild, medium, or spicy, to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 14.5 ounces diced tomatoes (canned, with juices)
  • 2 tablespoons fresh cilantro, chopped
  • 1 piece lime, cut into wedges (optional)

Directions

Step 1

Prepare the beef by patting it dry with paper towels. Season the chuck roast generously with salt and black pepper on all sides.

In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Sear the beef on all sides until browned, about 2-3 minutes per side. Remove the beef and set aside.
