Ingredients

  • 4 pieces (6 oz each) salmon fillets
  • 1 medium (peeled and diced) ripe mango
  • 1 medium (finely diced) red bell pepper
  • 2 stalks (finely chopped) green onion
  • 2 tablespoons (chopped) fresh cilantro
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1.5 teaspoons salt
  • 1 teaspoon (divided) black pepper
  • 1 teaspoon paprika
  • 3 tablespoons mango chutney
  • 1 cup panko breadcrumbs
  • 2 tablespoons (melted) unsalted butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

In a small bowl, combine the paprika, 1 teaspoon of salt, and 0.5 teaspoons of black pepper. Rub the salmon fillets evenly with this mixture and set aside.

Step 3

In another bowl, mix together the diced mango, red bell pepper, green onions, cilantro, lime juice, 0.5 teaspoons of salt, 0.5 teaspoons of black pepper, olive oil, and honey. Set this salsa aside to allow the flavors to meld.

Step 4

In a separate bowl, combine the mango chutney, melted butter, and panko breadcrumbs. Stir until the mixture resembles a loose paste.

Step 5

Place the salmon fillets skin-side down on the prepared baking sheet. Spread a layer of the mango chutney-panko mixture evenly over the top of each fillet.

Step 6

Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.

Step 7

Remove the salmon from the oven and let it rest for 2 minutes. Plate each fillet and top with a generous spoonful of the mango salsa.

Step 8

Serve immediately and enjoy the vibrant flavors!
