Ingredients

  • 4 pieces Salmon fillets
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.5 cup Dry white wine
  • 2 tablespoons Dijon mustard
  • 0.25 cup Heavy cream
  • 1 medium (finely chopped) Shallot
  • 1 tablespoon Unsalted butter
  • 2 tablespoons (chopped) Fresh parsley

Directions

Step 1

Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.

Step 2

Heat a large skillet over medium heat and add the olive oil. Once the oil is hot, place the salmon fillets skin-side down in the skillet and cook for 4-5 minutes until the skin is crispy. Carefully flip the fillets and cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside on a plate.

Step 3

In the same skillet, melt the butter over medium heat. Add the finely chopped shallot and sauté for 2-3 minutes until softened and fragrant.
