Ingredients

  • 4 pieces salmon fillets, skin-on
  • 3 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 0.5 cup fresh basil leaves, chopped
  • 0.25 cup red onion, finely diced
  • 2 cloves garlic cloves, minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 pieces lemon wedges (for serving)

Directions

Step 1

Rinse the salmon fillets under cold water and pat them dry with paper towels. Season both sides with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, place the salmon fillets skin-side down in the pan. Cook for 3-4 minutes, then flip and cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork. Remove from skillet and set aside.
