Ingredients

  • 4 pieces (6 oz each) Salmon fillets, skin-on
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic, minced
  • 0.5 cup Dry white wine
  • 1 cup Heavy cream
  • 2 tablespoons Fresh tarragon, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down in the skillet and cook for 4-5 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes until the salmon is just cooked through. Remove the fillets from the skillet and set aside.

Reduce the heat to medium and add unsalted butter to the same skillet. Once melted, add the minced garlic and sauté for 30 seconds until fragrant.

Deglaze the skillet by pouring in the dry white wine, scraping the bottom of the pan to release any browned bits. Let the wine simmer for 2-3 minutes until reduced by half.
