Ingredients

  • 4 pieces (6 oz each) salmon fillets
  • 2 tablespoons olive oil

  • 3 cloves garlic cloves
  • 10 cups fresh baby spinach
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon honey
  • 2 teaspoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 slices lemon slices

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Season the salmon fillets with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Set aside.
