Ingredients

  • 4 pieces Salmon fillets
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 cup Red wine
  • 2 pieces Shallots, finely chopped
  • 2 pieces Garlic cloves, minced
  • 2 tablespoons Honey
  • 2 tablespoons Butter
  • 1 piece Cinnamon stick
  • 2 pieces Star anise
  • 1 cup Chicken or vegetable stock
  • 2 pieces Fresh thyme sprigs

Directions

Step 1

Season the salmon fillets with 1 teaspoon salt and 1 teaspoon black pepper on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Place the salmon fillets skin side down and sear for about 3-4 minutes until crispy. Flip the fillets and cook for another 3-4 minutes until the salmon is cooked through. Remove from the skillet and set aside on a plate.

Step 3

In the same skillet, add the finely chopped shallots and minced garlic. Sauté over medium heat for 2-3 minutes until softened and fragrant.

Pour in 1 cup of red wine and bring to a simmer. Add the cinnamon stick, star anise, and fresh thyme sprigs. Allow the mixture to simmer for 5 minutes to infuse the flavors.
