Ingredients

  • 4 pieces salmon fillets
  • 3 tablespoons olive oil
  • 2 whole red bell peppers
  • 4 cloves garlic cloves
  • 1 medium onion
  • 2 tablespoons fresh parsley
  • 1 whole lemon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Start by prepping all your ingredients. Slice the red bell peppers into thin strips, finely chop the garlic, dice the onion, and chop the fresh parsley. Cut the lemon into wedges for serving.

Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.

Heat 2 tablespoons of olive oil in a large, non-stick skillet over medium-high heat. Place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes on one side, then carefully flip and cook for another 3-4 minutes, or until the salmon is cooked to your liking.
