Ingredients

  • 4 pieces salmon fillets
  • 113 grams unsalted butter
  • 30 grams pistachios, shelled and roughly chopped
  • 15 grams fresh basil leaves, chopped
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a mixing bowl, combine the unsalted butter, pistachios, basil, lemon zest, and minced garlic. Mix well and set aside. Optionally, place the mixture in the refrigerator to firm up slightly.

Step 3

Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.

Step 4

Heat a large oven-safe skillet over medium-high heat with 1 tablespoon of olive oil. Once hot, sear the salmon fillets skin-side up for 2-3 minutes until golden brown.

Step 5

Turn the fillets skin-side down and transfer the skillet to the preheated oven. Bake for 8-10 minutes, or until the salmon is cooked to your preferred doneness.

Step 6

While the salmon is baking, scoop the pistachio basil butter onto a piece of plastic wrap or parchment paper. Shape it into a small log and refrigerate for slicing if desired.

Step 7

Once the salmon is cooked, remove the skillet from the oven. Place a slice or dollop of the pistachio basil butter on each fillet while still warm, allowing it to melt and enhance the flavor.

Step 8

Serve the salmon immediately, garnished with additional chopped pistachios or fresh basil for presentation if desired.
