Ingredients

  • 4 pieces Salmon fillets, skin-on
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 piece Lemon
  • 12 ounces Fettuccine or spaghetti pasta
  • 0.5 cup Store-bought or homemade basil pesto
  • 0.25 cup Heavy cream
  • 0.25 cup Parmesan cheese, grated
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Fresh basil leaves, for garnish

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente, then drain, reserving 1 cup of pasta water. Set aside.

Step 2

Season the salmon fillets with salt, pepper, and a drizzle of olive oil. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil.

Step 3

Place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes, until the skin is crispy, then flip and cook for another 2-3 minutes, until the flesh is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside.

Step 4

In the same skillet, lower the heat to medium and add the remaining olive oil and the halved cherry tomatoes. Sauté the tomatoes for 2-3 minutes until slightly softened.

Add the cooked pasta to the skillet and toss gently to coat it evenly in the pesto sauce. Stir in the grated Parmesan cheese and cook for another 2 minutes until everything is combined and warmed through.

Step 7

Serve the pasta onto plates or bowls and top each serving with a seared salmon fillet. Squeeze fresh lemon juice over the salmon.

Garnish with fresh basil leaves and additional Parmesan cheese, if desired. Serve immediately and enjoy!
