Ingredients

  • 4 pieces salmon fillets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large celeriac (celery root)
  • 2 medium-sized potatoes
  • 3 tablespoons butter
  • 1 cup milk
  • 2 tablespoons Dijon mustard
  • 2 tablespoons parsley (chopped, for garnish)
  • 4 pieces lemon wedges

Directions

Step 1

Peel the celeriac and potatoes, then chop them into small chunks for easier cooking.

Step 2

Bring a large pot of salted water to a boil. Add the celeriac and potatoes, and cook for 15-20 minutes, or until tender when pierced with a fork.

Step 3

While the vegetables are cooking, season the salmon fillets with salt and pepper on both sides.

Step 4

Heat a large skillet over medium-high heat and add the olive oil. Once hot, place the salmon fillets skin-side down in the pan.

Step 5

Cook the salmon for 4-5 minutes on one side, then flip and cook for an additional 3-4 minutes, or until the salmon is cooked to your desired doneness. Remove from the skillet and set aside to rest.

Step 6

Once the celeriac and potatoes are tender, drain them and return them to the pot. Add the butter, milk, and Dijon mustard.

Step 7

Mash the mixture with a potato masher or fork until smooth and creamy. Adjust seasoning with additional salt and pepper to taste.

Step 8

Plate the celeriac mash and place a salmon fillet on top. Garnish with chopped parsley and serve with a lemon wedge on the side for an extra burst of flavor.
