Ingredients

  • 4 pieces (6 oz each) salmon fillets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 large (ripe, peeled, and diced) mango
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 2 tablespoons (chopped) fresh cilantro
  • 0.5 small (seeded and finely chopped) red chili (optional)
  • 1 clove (minced) garlic

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Pat the salmon fillets dry with a paper towel. Rub them on all sides with 1 tablespoon of olive oil, then season evenly with salt and black pepper.

Step 3

Arrange the seasoned salmon fillets on the prepared baking sheet and set aside.

Step 4

In a blender or food processor, combine the mango, lime juice, honey, cilantro, garlic, and the remaining 1 tablespoon of olive oil. Add the red chili if you prefer a bit of heat. Blend until smooth to make the mango dressing.

Step 5

Taste the dressing and adjust seasoning if necessary — you may add a pinch of salt or a little more lime juice depending on your preference.

Step 6

Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through (internal temperature of 145°F/63°C).

Step 7

Remove the salmon from the oven and allow it to rest for 2 minutes.

Step 8

Serve the salmon fillets warm, drizzled generously with the mango dressing. Garnish with a sprinkling of fresh cilantro if desired.
