Ingredients

  • 4 pieces (6 oz each) salmon fillets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 sprigs (plus extra for garnish) fresh rosemary
  • 3 cloves (minced) garlic
  • 1 large (juice and zest) lemon
  • 2 tablespoons (drained) capers
  • 2 tablespoons unsalted butter
  • 0.25 cups white wine or chicken stock

Directions

Step 1

Preheat your oven to 375°F (190°C).

Pat the salmon fillets dry with a paper towel. Season both sides with salt and black pepper.

Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, place the salmon fillets skin-side down in the skillet. Sear for 3-4 minutes without moving them, until the skin is crispy.
