Ingredients

  • 4 pieces salmon fillets
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium mango, diced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped cilantro (optional garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Pat the salmon fillets dry with paper towels, season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper, and set aside.

Slice the red and yellow bell peppers into thin strips and set them aside.

In a medium bowl, mix olive oil, lime juice, honey, minced garlic, and the remaining salt and pepper. Stir until well combined.
