Ingredients

  • 4 pieces (6 oz each) salmon fillets
  • 8 oz cream cheese
  • 8 cups fresh spinach
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 0.5 cup heavy cream
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease with olive oil.

Step 2

Season the salmon fillets with salt, black pepper, and paprika on all sides. Place them skin-side down on the prepared baking sheet. Set aside.

Step 3

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.

Step 4

Add the spinach to the skillet and cook, stirring occasionally, until wilted, about 3-4 minutes. Remove from heat and set aside.

Step 5

In a small saucepan over medium heat, combine the cream cheese, heavy cream, lemon juice, 1 tablespoon of butter, and a pinch of salt. Stir continuously until the mixture becomes smooth and creamy, about 3-5 minutes.

Step 6

Gently fold the cooked spinach into the cream cheese mixture. Remove from heat.

Step 7

Spoon the spinach and cream cheese mixture evenly over the salmon fillets.

Step 8

Bake the salmon in the preheated oven for 18-22 minutes, or until the salmon is just cooked through and flakes easily with a fork.

Step 9

Remove the salmon from the oven and let rest for 2-3 minutes before serving.

Step 10

Serve warm, paired with your favorite side dish, such as roasted vegetables, rice, or mashed potatoes.
