Ingredients

  • 4 pieces Salmon fillets (skin-on)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 whole Serrano peppers
  • 1 cup Mayonnaise
  • 2 cloves Garlic cloves (minced)
  • 1 tablespoon Fresh lime juice
  • 1 cup Cilantro (chopped)
  • 0.5 teaspoons Paprika (optional, for garnish)

Directions

Step 1

Preheat the broiler on high.

Step 2

Place the serrano peppers on a baking sheet and broil for 5-7 minutes, turning occasionally, until they are charred and blistered. Remove from the oven and allow them to cool slightly.

Step 3

Once cooled, remove the stems from the peppers and finely chop them. If desired, remove the seeds for less heat.

Step 4

In a small bowl, combine the chopped serrano peppers, mayonnaise, minced garlic, and lime juice. Mix well to create the aioli. Set aside.

Step 5

Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Step 6

Heat olive oil in a large non-stick skillet over medium heat. Place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes without moving them, allowing the skin to crisp.

Step 7

Carefully flip the salmon fillets and continue to cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

Step 8

To serve, place the cooked salmon fillets on plates and spoon the roasted serrano aioli over the top.

Step 9

Garnish with chopped cilantro and a light sprinkle of paprika, if desired.

Step 10

Serve immediately and enjoy this flavorful and elegant dish.
