Ingredients

  • 4 pieces salmon fillets
  • 6 tablespoons unsalted butter
  • 3 pieces garlic cloves, minced
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 cup chicken or vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 tablespoons fresh parsley, chopped
  • 4 pieces lemon slices (optional for garnish)

Directions

Step 1

Pat the salmon fillets dry with a paper towel and season with salt and freshly ground black pepper on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 3

Place the salmon fillets skin-side down (if the skin is on) into the hot skillet. Cook for 4-5 minutes, then flip and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside on a plate.

Step 4

Reduce the heat to medium and add 6 tablespoons of unsalted butter to the same skillet. Allow the butter to melt completely.

Step 5

Stir in the minced garlic and cook for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 6

Pour in the chicken or vegetable broth and freshly squeezed lemon juice. Stir well and let the sauce simmer for 3-4 minutes to slightly reduce and thicken.

Step 7

Return the cooked salmon fillets to the skillet, spooning the butter sauce over the fish. Let them warm through for 1-2 minutes.

Step 8

Sprinkle fresh chopped parsley over the salmon and serve immediately, garnished with optional lemon slices.
