In a medium bowl, combine the brown sugar, bourbon, soy sauce, Dijon mustard, minced garlic, and olive oil. Stir well until the sugar dissolves and the mixture is smooth.
Pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.
Place the salmon fillets in a shallow dish or resealable plastic bag and pour half of the bourbon-brown sugar mixture over them. Reserve the other half for later. Marinate the salmon in the refrigerator for 30 minutes to 1 hour.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with nonstick cooking spray.
Remove the salmon from the marinade and discard the used marinade. Place the salmon fillets on the prepared baking sheet, skin-side down.
