Ingredients

  • 4 pieces (6 oz each) skin-on salmon fillets
  • 1 cup fresh blackberries
  • 0.5 cup (1 stick) unsalted butter
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons olive oil
  • 1.5 teaspoons kosher salt
  • 1 teaspoon black pepper

Directions

Step 1

Prepare the blackberry butter: In a small bowl, use a fork to mash the blackberries until fairly smooth. In a separate medium bowl, combine the softened butter, mashed blackberries, honey, lemon zest, lemon juice, and thyme leaves. Stir until well combined. Place the mixture on a sheet of plastic wrap and shape it into a small log. Wrap tightly and refrigerate while preparing the salmon.

Step 2

Season the salmon fillets on both sides with 1 teaspoon of kosher salt and 1 teaspoon of black pepper.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering but not smoking, place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes until the skin is crisp and golden brown.

Step 4

Carefully flip the salmon fillets and cook for another 3-4 minutes, or until the salmon is cooked to your desired doneness and flakes easily with a fork. Remove from the skillet and let rest for 2 minutes.

Step 5

To serve, slice the chilled blackberry butter into rounds. Place a round on each salmon fillet, allowing it to melt slightly over the warm fish. Garnish with additional fresh blackberries and thyme leaves, if desired.

Step 6

Serve immediately with your choice of sides such as roasted asparagus or wild rice.
