Ingredients

  • 4 pieces salmon fillets, skin-on
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 6 cups mixed baby greens
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar

Directions

Step 1

Season both sides of the salmon fillets with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Once hot, place the salmon fillets skin-side down and sear for 4-5 minutes. Flip the fillets and cook for another 3-4 minutes until salmon is cooked through and flakes easily with a fork. Remove from the skillet and set aside.

Step 3

Reduce the heat to medium and add the butter to the same skillet. Once melted, add the minced garlic and sauté for 30 seconds until fragrant.

Step 4

Pour in the heavy cream, stirring to combine. Let the sauce simmer for 2-3 minutes until slightly thickened.

Step 5

Stir in the chopped dill and lemon juice. Adjust seasoning with additional salt and pepper, if needed. Turn off the heat and keep the sauce warm.

Step 6

In a large mixing bowl, combine the mixed baby greens, cherry tomatoes, and cucumber slices.

Step 7

Drizzle the greens with extra-virgin olive oil and balsamic vinegar. Toss to coat evenly.

Step 8

Divide the greens among four serving plates, creating a bed for the salmon.

Step 9

Place a seared salmon fillet on top of each plate of greens.

Step 10

Spoon the creamy garlic dill sauce over each fillet. Serve immediately and enjoy!
