Ingredients

  • 4 pieces salmon fillets
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 tablespoons shallots, finely chopped
  • 2 cloves garlic, minced
  • 1 cup Merlot wine
  • 0.75 cup chicken or vegetable stock
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground

Directions

Step 1

Season the salmon fillets with a pinch of salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Place the salmon fillets skin-side down in the skillet and cook for 3-4 minutes until the skin is crispy. Flip and cook for another 2-3 minutes on the other side until the fish is just cooked through. Remove the salmon from the skillet and set aside on a plate.
