Ingredients

  • 4 pieces Salmon steaks
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Shallots, finely chopped
  • 1 clove Garlic, minced
  • 1 cup Dry white wine
  • 1 quarter-cup Heavy cream
  • 2 tablespoons Fresh parsley, chopped
  • 1 whole Lemon, sliced

Directions

Step 1

Season both sides of the salmon steaks evenly with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the salmon steaks and cook for 3-4 minutes per side, or until golden brown and cooked to your desired doneness. Remove the salmon from the skillet and set aside on a plate.

Step 3

Turn the heat down to medium. In the same skillet, add the butter and let it melt. Stir in the finely chopped shallots and minced garlic, cooking for 1-2 minutes until fragrant and softened.

Step 4

Pour in the dry white wine, scraping the bottom of the skillet to deglaze any browned bits. Let the wine reduce by half, which should take about 3 minutes.

Step 5

Stir in the heavy cream, allowing the sauce to simmer gently for another 2 minutes. Taste the sauce and adjust seasoning with additional salt and pepper if needed.

Step 6

Return the salmon steaks to the skillet, spooning some of the sauce over the top. Let them heat through for 2-3 minutes.

Step 7

Transfer the salmon steaks to serving plates, spooning the wine sauce generously over each piece.

Step 8

Garnish with chopped fresh parsley and serve with lemon slices on the side.
