Ingredients

  • 2 sheets Puff pastry sheets (thawed)
  • 300 grams Fresh salmon fillet
  • 100 grams Sour cream
  • 50 grams Cream cheese
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh dill (finely chopped)
  • 2 stalks Green onions (finely chopped)
  • 1 Carrot (grated)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Egg (beaten for egg wash)
  • 1 teaspoon Olive oil

Directions

Step 1

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

Heat a teaspoon of olive oil in a skillet over medium heat. Cook the salmon fillet until just barely cooked through, about 3-4 minutes on each side. Remove from heat, let cool slightly, then flake the salmon into small pieces using a fork.

Step 3

In a mixing bowl, combine the flaked salmon, sour cream, cream cheese, lemon juice, chopped dill, green onions, grated carrot, salt, and black pepper. Mix well until a creamy filling is formed.

Step 4

On a lightly floured surface, roll out the puff pastry sheets to smooth out any creases. Cut each sheet into 4 equal squares, for a total of 8 squares.

Step 5

Place a heaping tablespoon of the salmon filling in the center of each puff pastry square.

Step 6

Fold each square diagonally to form a triangle, and press the edges together firmly to seal. You can use the tines of a fork to crimp the edges for extra security and decoration.

Step 7

Transfer the turnovers to the prepared baking sheet. Brush the tops with the beaten egg to create a golden, glossy finish when baked.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.

Step 9

Remove from the oven and let cool for a few minutes before serving. Serve warm or at room temperature as a main dish or appetizer.
