Ingredients

  • 500 grams Salmon fillet, skinless and boneless
  • 3 medium Potatoes, peeled and diced
  • 2 medium Carrots, peeled and sliced
  • 1 medium Leek, thinly sliced (white and light green parts only)
  • 3 tablespoons Butter
  • 4 cups Chicken or vegetable stock
  • 1 cup Heavy cream
  • 2 tablespoons Fresh dill, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 1 tablespoon Lemon juice
  • 1 whole Bay leaf
  • 1 tablespoon All-purpose flour

Directions

Step 1

Cut the salmon fillet into bite-sized cubes and set aside in the refrigerator.

Step 2

In a large pot, melt the butter over medium heat. Add the sliced leek and sauté for 3-4 minutes until softened but not browned.

Add the diced potatoes and sliced carrots to the pot. Sprinkle with the flour and stir well to coat the vegetables evenly.
