  • 1 cup cooked salmon, flaked
  • 4 large egg yolks
  • 6 large egg whites
  • 0.25 teaspoons cream of tartar
  • 1 tablespoon unsalted butter (for greasing dish)
  • 2 tablespoons bread crumbs (for coating dish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 2-quart soufflé dish with 1 tablespoon of butter, then coat it with bread crumbs, shaking out any excess.

In a medium saucepan, melt 3 tablespoons of butter over medium heat. Add the flour and whisk constantly for 1-2 minutes to create a roux, but do not let it brown.

Gradually add the milk while whisking, and cook for 3-4 minutes, until the mixture thickens to a smooth sauce. Add the nutmeg, salt, and white pepper, then stir to combine.
