  • 200 milliliters heavy cream
  • 2 tablespoons fresh tarragon (chopped)
  • 1 teaspoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper (freshly ground)

Directions

Step 1

Cut the salmon fillet into evenly sized rounds approximately 1.5 inches in diameter and 1 inch thick using a small round cutter or a sharp knife. These will resemble scallops. Pat them dry with a paper towel.

Season the salmon pieces on both sides with a pinch of salt and freshly ground black pepper.

Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat. When the pan is hot, add the salmon scallops, making sure not to overcrowd the pan.
