Ingredients

  • 1 cup Sushi rice
  • 1.25 cups Water
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt
  • 100 grams Salmon roe (Ikura)
  • 2 whole Nori sheets
  • 2 tablespoons Soy sauce
  • 1 teaspoon Wasabi
  • 2 tablespoons Pickled ginger

Directions

Step 1

Rinse 1 cup of sushi rice under cold water until the water runs clear to remove excess starch.

Step 2

Combine the rinsed rice with 1.25 cups of water in a rice cooker. Cook according to your rice cooker's instructions.

Step 3

While the rice cooks, prepare the rice seasoning by mixing 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoons of salt in a small saucepan over low heat. Stir until the sugar and salt dissolve completely. Remove from heat and let it cool.

Step 4

Once the rice is cooked, transfer it to a large wooden or glass bowl. Gently fold in the vinegar mixture using a wooden spatula, being careful not to mash the rice. Let the rice cool to room temperature.

Meanwhile, cut the nori sheets into strips that are about 1 inch wide and 5 inches long.
