Rinse 1 cup of sushi rice under cold water until the water runs clear to remove excess starch.
Combine the rinsed rice with 1.25 cups of water in a rice cooker. Cook according to your rice cooker's instructions.
While the rice cooks, prepare the rice seasoning by mixing 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 0.5 teaspoons of salt in a small saucepan over low heat. Stir until the sugar and salt dissolve completely. Remove from heat and let it cool.
Once the rice is cooked, transfer it to a large wooden or glass bowl. Gently fold in the vinegar mixture using a wooden spatula, being careful not to mash the rice. Let the rice cool to room temperature.
Meanwhile, cut the nori sheets into strips that are about 1 inch wide and 5 inches long.
With wet hands, take a small portion of the cooled rice and shape it into oval-shaped balls, slightly smaller than the size of an egg.
Wrap each rice ball's side with a strip of nori, with the shiny side facing outwards. Ensure the nori completely encircles the rice, leaving the top exposed.
Fill the top of each rice ball with approximately 10 grams of salmon roe.
Garnish the salmon roe sushi with a small dot of wasabi on the roe if desired.
Repeat until all the rice has been used.
Serve the salmon roe sushi immediately with soy sauce, wasabi, and pickled ginger on the side.
