Ingredients

  • 4 pieces salmon fillets
  • 500 grams baby potatoes
  • 1 medium zucchini
  • 1 medium carrot
  • 1 large lemon
  • 3 tablespoons olive oil
  • 2 tablespoons fresh dill
  • 2 small garlic cloves
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons butter
  • 4 sheets aluminum foil

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Wash and halve the baby potatoes. Cook them in boiling salted water for 10 minutes, then drain and set aside.

Step 3

Thinly slice the zucchini and carrot into rounds.

Step 4

Finely chop the garlic cloves and set them aside.

Step 5

Prepare four large sheets of aluminum foil (about 12x12 inches each).

Step 6

Place an equal portion of the semi-cooked baby potatoes in the center of each foil sheet.

Step 7

Top the potatoes with the zucchini and carrot slices, dividing them equally among the parcels.

Step 8

Drizzle 1/2 tablespoon of olive oil over the vegetables in each parcel.

Step 9

Place a salmon fillet over each vegetable pile, then season each fillet with a pinch of salt and black pepper.

Step 10

Zest the lemon and scatter the zest over the salmon. Cut the lemon into thin slices and place a slice on top of each fillet.

Step 11

Sprinkle 1/2 tablespoon of fresh dill and a small amount of chopped garlic over each parcel.

Step 12

Add a small pat of butter (about 1/2 tablespoon) on top of each fillet.

Step 13

Fold the foil sheets over the ingredients to create sealed parcels, ensuring no gaps remain to retain steam.

Step 14

Place the foil parcels onto a baking sheet and bake in the preheated oven for 20 minutes.

Step 15

Carefully remove the parcels from the oven and let them rest for 2 minutes before opening.

Step 16

Serve the parcels directly on plates for a stunning presentation, allowing each guest to unwrap their own.
