Ingredients

  • 400 grams Penne pasta
  • 300 grams Salmon fillet (skinless)
  • 2 tablespoons Olive oil
  • 3 units Garlic cloves (minced)
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese (grated)
  • 2 cups Baby spinach
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley (chopped, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the salmon fillet with salt and black pepper.

Step 3

Place the salmon fillet in the skillet and cook for 3-4 minutes on each side until cooked through and easily flaked with a fork. Remove the salmon from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic for 1 minute until fragrant.

Lower the heat and stir in the heavy cream. Let it simmer gently for 2-3 minutes, stirring occasionally.

Add the grated Parmesan cheese to the skillet and stir until melted and the sauce is smooth. If the sauce is too thick, use the reserved pasta water to adjust the consistency.

Flake the cooked salmon into bite-sized pieces and return it to the skillet. Add the baby spinach and cook for 1-2 minutes until the spinach wilts.

Season the sauce with lemon juice, additional salt, and black pepper to taste.

Toss the drained penne pasta with the salmon sauce until well coated.

Serve immediately, garnished with chopped parsley and a sprinkle of Parmesan cheese, if desired.
