Ingredients

  • 350 grams Pasta (penne or fettuccine)
  • 400 grams Salmon fillet (skinless)
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic cloves (minced)
  • 1.5 cups Heavy cream
  • 0.5 cups Chicken or vegetable broth
  • 3 cups Fresh spinach (roughly chopped)
  • 1 cup Parmesan cheese (grated)
  • 1 teaspoons Lemon zest
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Fresh parsley (finely chopped, optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

Season the salmon fillet with salt and black pepper on both sides.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the salmon and cook for 3-4 minutes on each side, or until it is cooked through and flakes easily with a fork. Remove from the skillet and set aside. Break the salmon into bite-sized pieces.

Step 4

In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant.

Pour the heavy cream and chicken or vegetable broth into the skillet. Stir to combine and bring the mixture to a gentle simmer.
