Ingredients

  • 4 pieces (6 oz each) salmon fillets
  • 4 medium russet potatoes
  • 4 whole garlic cloves
  • 6 tablespoons butter
  • 0.5 cups milk
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon (to taste) salt
  • 1 teaspoon (to taste) black pepper
  • 0.5 teaspoons paprika

Directions

Step 1

Peel and chop the potatoes into evenly sized chunks and place them in a pot of cold, salted water.

Step 2

Bring the pot of potatoes to a boil and cook until they are fork-tender, about 15-20 minutes. Drain and set aside.

Step 3

While the potatoes cook, prepare the salmon by patting the fillets dry with paper towels and seasoning both sides with salt, pepper, and paprika.

Step 4

Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.

Step 5

Place the salmon fillets in the skillet, skin-side down (if applicable), and cook for 3-4 minutes until the skin is crisp. Flip the fillets and cook for an additional 3-4 minutes until the salmon is just opaque in the center. Remove from heat and set aside.

Step 6

In the same skillet, lower the heat and add the remaining 2 tablespoons of butter. Stir in the minced garlic and cook for 1 minute until fragrant.

Step 7

Add the lemon juice to the skillet, swirling to combine with the butter garlic mixture. Remove the sauce from heat and set aside.

Step 8

Mash the drained potatoes with a potato masher or fork. Gradually add the remaining 2 tablespoons of butter, warm milk, and salt to taste, mixing until the mashed potatoes are smooth and creamy.

Step 9

Build the dish by placing a generous scoop of mashed potatoes on each plate to form the ‘mash mountain.’

Step 10

Top each mound of potatoes with a salmon fillet and drizzle the lemon-butter sauce over the salmon and potatoes.

Step 11

Garnish with fresh parsley and serve immediately. Enjoy your Salmon on Mash Mountain!
