Ingredients

  • 1 cup Sushi rice
  • 1.25 cups Water
  • 3 tablespoons Rice vinegar
  • 1.5 tablespoons Sugar
  • 1 teaspoon Salt
  • 6 ounces Salmon (sashimi-grade), finely sliced
  • 3 whole Nori sheets
  • 1 medium Avocado, peeled and sliced
  • 0.5 cup Cucumber, julienned
  • 2 tablespoons Soy sauce, for serving
  • 2 tablespoons Pickled ginger, for serving
  • 1 teaspoon Wasabi, for serving

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear. This helps remove excess starch.

Step 2

Combine the rinsed rice and 1.25 cups of water in a rice cooker, and cook according to the manufacturer's instructions.

Step 3

While the rice is cooking, mix rice vinegar, sugar, and salt in a small saucepan over low heat until the sugar and salt dissolve. Let it cool slightly.

Step 4

Once the rice is cooked, transfer it to a large bowl. Pour the vinegar mixture over the rice, and use a wooden spatula to gently fold the rice until the seasoning is evenly distributed. Allow the rice to cool to room temperature, covering it with a damp cloth to prevent it from drying out.

Cut the nori sheets in half crosswise, so you have six half-sheets for rolling.

Repeat with remaining ingredients to make more hand rolls.
