Ingredients

  • 4 pieces Salmon fillets
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 3 cloves Garlic cloves, minced
  • 6 cups Fresh spinach
  • 1 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Nutmeg, ground

Directions

Step 1

Season the salmon fillets on both sides with salt and black pepper.

Step 2

In a large skillet, heat the olive oil over medium heat. Once hot, add the salmon fillets skin-side down. Cook for 3-4 minutes per side, or until golden and just cooked through. Remove the salmon from the skillet and set aside.

Step 3

Reduce heat to medium-low and add the butter to the same skillet. Once melted, stir in the minced garlic and sauté for 1 minute until fragrant.

Step 4

Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted.

Step 5

Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese, lemon juice, and ground nutmeg. Cook for 2-3 minutes, allowing the sauce to thicken slightly.

Step 6

Return the cooked salmon fillets to the skillet, nestling them into the creamy spinach sauce. Spoon some of the sauce over the top of the salmon.

Step 7

Simmer for an additional 2-3 minutes to allow the flavors to meld together.

Step 8

Serve the Salmon Florentine hot, garnished with a sprinkle of Parmesan cheese, alongside your favorite side dish such as roasted potatoes or rice.
